Rosé wine, or rosé, is a type of wine obtained thanks to a brief contact of the must with the skins of red grapes or other grapes with coloring substances such as Pinot Gris. This process can take place with the technique of soft pressing or bloodletting (saignée, in French), which consists of removing a part of the must during red vinification. Depending on the maceration time of the skins, we can speak of "one-night wines", when contact with the latter is less than 12 hours, and of "one-day wines" when the maceration lasts approximately 24 hours.

Contrary to what one might believe, rosé wine as a result of a blend between white wine and red wine is only permitted for the production of Champagne and rosé sparkling wine.
