If we want to give a doctor a bottle of wine, we still have to take this into account and choose something exclusive and traditional.
The Bollinger Champagne Brut La Grande Année Millesimato comes from the best Pinot Noir and Chardonnay vineyards cultivated in Aÿ, in the heart of Champagne. The vins clairs mature in oak barrels and the cuvée is refined on the lees for about 4 years. It is a Champagne with a strong personality, with mature, complex and persistent aromas, ideal to be enjoyed throughout the meal with important menus. Another great classic is Perrier Jouët's Champagne Brut Belle Epoque Millesimato. It comes from the famous vineyards of Éperney and represents the cuvée de préstige of the Maison. The aging on the lees lasts 60 months and gives an elegant bouquet, with floral, citrus and white fruit notes. The sip is harmonious, delicate, fresh and refined.
Among the whites we recommend two labels of sure excellence. L 'Umbria Bianco IGT of Cervaro Castello della Sala Sala is produced in the Umbrian estate of the Marchesi Antinori with chardonnay grapes and a small percentage of grechetto. Chardonnay ferments and ages in French oak barriques, while steel grechetto. The aromas are complex and range from ripe fruit, to exotic hints, to toasted hints, always supported by balanced freshness. The 'Alto Adige Müller Thurgau DOC Feldmarschall Von Fenner Tiefenbrunner is one of the most awarded white by industry guides. It comes from a vineyard cultivated at about 900 meters above sea level, which produces grapes with an intense and fine aromatic profile. The wine has a tense and vibrant sip, which opens up to fruity, rich and complex notes. We close with two great reds: the Ornellaia Bolgheri Superiore DOC Ornellaia from the Ornellaia Estate , a classic Bordeaux blend of cabernet sauvignon, merlot, petit verdot and cabernet franc, which expresses all the Mediterranean warmth of the Tuscan coast with mature and elegant aromas; and the Amarone Classico della Valpolicella DOC Bertani , a wine of the great Veronese tradition, produced with Corvina and Rondinella grapes. After the manual harvest, the best bunches are left to dry in the fruit cellar for a few months and then vinified. Amarone Bertani has always been the most faithful interpretation of the territory, with rich and wide aromas, but always well balanced by the presence of an elegant tannic texture and pleasant freshness.
