The buffalo mozzarella from Campania is one of the best excellence of our dairy tradition and is the only mozzarella to have received the DOP recognition from the European Union. The production area is mainly concentrated in the area of the territories of the provinces of Salerno and Caserta. For its production, only whole fresh buffalo milk from certified dairies operating in the DOP area is used. The name mozzarella derives from the ancient gesture of the cheesemaker to "cut off" the mass of stringy pasta in small parts with his hands to make the various pieces of mozzarella. Once ready, the buffalo mozzarella is stored in the government liquid. It has a light white external film, smooth and a few millimeters thick. The interior is made up of a soft stringy paste without holes . When cut it is soft, elastic and compact, with a slight presence of milky whey. The flavor is delicate, with good persistence and final intensity. It is a very tasty cheese, with excellent nutritional characteristics. In addition to calcium, phosphorus, zinc and vitamins, it contains a good percentage of proteins and fats. It is a cheese with a taste of fresh milk, creamy and slightly fatty. The ideal pairing is with a young, fresh white wine, with a simple aromatic profile and characterized by good acidity, which goes against the typical sensation of fatness of the mozzarella. As often happens, territorial combinations are among the most suitable. An Asprinio d'Aversa will be perfect with buffalo mozzarella, which with its fruity, citrusy bouquet and citrus freshness goes perfectly with the rich and soft taste of the cheese. Another wine that goes very well is a young Falanghina , from Benevento or Campi Flegrei , with fresh fruity and floral aromas and a lively final freshness. Another wine suitable to accompany buffalo mozzarella is a young Greco di Tufo, aged only in steel, characterized by a vibrant freshness and pleasantly fruity aromas.
