The term "agricultural rum" indicates the rum which, unlike industrial products obtained from molasses, is obtained exclusively from the fermentation of pure sugar cane juice , also called "miel virgen", which gives rise to a distillate generally softer, fruity and aromatic .

It is a production method originally from the French Antilles , and in particular from Martinique , where "Rhum Agricole" is a mention of the Martinique AOC protected designation of origin. Nevertheless, rum from pure cane juice are produced almost everywhere in the Caribbean and Central America , so much so that the most famous of the rums attributable to this type, Zacapa , is produced in Guatemala. In Brazil, the sugar cane juice distillate is called cachaça . Special mention should be made of clairin , white rum from pure cane juice produced on the island of Haiti , where over 500 artisan distilleries operate.
