Australia's winemaking tradition is less than two centuries old, however Penfolds has been one of the most important companies since its inception and its history deeply reflects the evolution of the country from the colonial era to the modern era. Founded in 1844 , only 8 years after the birth of the state of South Australia, Penfolds has in fact played a fundamental role in the way of making wine in Australia and in the world , thanks to the work of Max Schubert , the company's oenologist since the years' 50, who managed, with an unusual determination , to fulfill his dream of making the best wine in all of Australia: Grange Bin 95 .

Since then Penfolds has been an absolute reference point with its critically acclaimed wines; it is no coincidence that Penfolds was the only Australian company to receive, for Grange's 2008 vintage, a rating of 100 points from both Wine Spectator and Robert Parker , and 99 points from Robert Parker in the current year.

Penfolds is the story of a man, Max Schubert , and his ambition to produce the best wine in Australia , which was initially opposed by the company itself and by critics. After spending several years in France to deepen his knowledge of the great French wines and their winemaking processes, in 1957 his work was subjected to evaluation by the company's board of directors, made up of leading figures from the world some wine. Experience from which Max Schubert came out defeated, downcast and humiliated: his wines were despised unanimously . In particular, one of the critics made this observation: "Schubert, I congratulate you. You have made a good dry port, which nobody will buy, let alone drink". However, Max, did not abandon his dream , and after several experiments conducted in secret, hiding the wines of the vintages from 1952 to 1959 behind a wall, in a secret place of the Magill Estate cellar, gave birth to Grange Bin 95 , a wine mainly composed of Shiraz grapes, with a strong structure, obtained from the maximum extraction of the grapes and destined to last over time , officially recognized as the Heritage Icon, which in the following years inspired the way of making wine in Australia , so much so that it was officially recognized as Heritage Icon of South Australia .
