Monte Rossa
It was 1972 when Paolo Rabotti decided that viticulture would be his way and he founded Monte Rossa, in Bornato di Cazzago San Martino, in the province of Brescia. Supported by his wife Paola Rovetta, he believed in the potential of the Franciacorta territory and helped to establish the Protection Consortium of which he was also the first president. It was he who imposed the strict rules that guarantee the quality of these denomination sparkling wines still today. In 1992 the company was entrusted to his son Emanuele, who undertook a gradual modernization process that led him to equip himself with EnoLift (literally eno-lift), a cutting-edge system that uses gravity to move wine on the three cellar levels, limiting as much as possible the intervention of the pumps for the transfer.
The 15 crus distributed on the moraine of the Monte Rossa hill and on other sandy and clayey soils at different exposures help to broaden the range of aromas perceived in the bouquet of these elegant bubbles and to enrich them on the palate in flavor, complexity and elegance. The use of barriques for fermentation and the addition of reserve wines bring structure and greater balance over the years to these Franciacorta wines.
Although the Monte Rossa business card remains the Prima Cuvée Brut , the most representative and prestigious sparkling wine from the winery is undoubtedly the Cabochon , also present in the Rosé version, dressed with an exclusive silver label by the goldsmith Buccellati and known also to be particularly appreciated by the famous singer Frank Sinatra. Other illustrious Franciacorta wines from the Monte Rossa house are the Satèn Sansevé , the Pas Dosé Coupé , an evocative name that wants to reflect its style, the Extra Brut Salvàdek, a sparkling wine with a strong personality produced only in the best vintages, the Brut Rosé Flamingo that recall fun and the excitement of Las Vegas, ending with the Brut PR , a high-class sparkling wine, large and harmonious in the pure Monte Rossa style that brings with it the initials of the founders as a tribute to their 35 years of activity .
