Philipponnat is the historical name of
Ay, east of the Valée de la Marne , where the
Maison has owned the vineyards for almost five centuries thanks to Apvril le Philipponnat. Here, in the town between Ay and Dizy called "Le Léon", the history of the family has been perpetuating since the 16th century producing extraordinary
Champagne .
The Maison's 17 hectares of vineyards are located in the
Premiers and Grands Crus of Ay, Mareuil-sur-Ay and Avenay , in precious soils that are traditionally preserved and worked with
meticulous attention: weeding and plowing are still done by hand today and on horseback, to keep the qualities of the land intact . This is how the pearl of the Maison, the
Clos des Goisses , is preserved, a magnificent 5.5 hectare vineyard all sloping.
The grapes for the production of the Maison's wines are always harvested
more mature than the average of the Champagne and the refinement then follows the
solera method , where in each bottle the traces of the thousandths assembled from the origin are kept, through a progressive dilution .
The result is great classics such as
Champagne AOC Blanc de Noirs Extra Brut and
Champagne AOC Grand Blanc Extra Brut , two pure expressions of
Pinot Noir and
Chardonnay respectively produced with the best grapes of a single vintage. Champagne deeply different but with a common point, the elegant vinosity given by the rest in wood and on the lees, which make these two Champagnes of
extraordinary complexity . Another great product of the Maison is the
Champagne AOC Royale Réserve Brut , where the evident prevalence of the Pinot Nero is perceived, which thanks to the three years of aging on the lees, acquires a remarkable maturity and complexity, while remaining a fresh and perfect wine for the 'appetizer.
