The excellent grapes from the best crus in the region ( Montagne de Reims, Côtes des Blancs, Vallée de La Marne , to name a few) reach the cellar where they improve thanks to the care of the skilled chef de cave François Domi : double decantation to eliminate all impurities, separate vinification of the musts of each vineyard, slow fermentation of the vin clairs , re-fermentation in the original bottles, without decanting, and long refinements carried out inside the underground cellars dug in the chalk - " craie " -, in conditions of humidity and optimal temperature.
