With large temperature ranges and vineyards protected from cold winds thanks to the island's main mountain range, the grapes are destemmed and crushed before starting fermentation with selected yeasts. Fermentation takes place in steel at low temperatures to preserve the aromatic component of the wines as much as possible.

Rapaura Springs Winery Sauvignon Blanc is produced in New Zealand's southern Marlborough region.

The vineyards are located close to the Opawa river resting on alluvial and loamy soils. Low density and refreshing winds from the east help the grapes to reach a full degree of ripeness. After harvesting, the grapes were immediately transferred to the cellar to proceed with soft pressing and fermentation at low temperatures to preserve the primary fruits.
