Pagadebit Strati by Enio Ottaviani is an exquisite white wine hailing from the San Clemente hills, in the province of Rimini, from vineyards characterized by a good south-east exposure cultivated on clayey-clay soils.

It is made almost entirely from Pagadebit grapes with small additions of Bombino Bianco. Both the fermentation and the ageing of the wine are carried out in concrete tanks.

Pagadebit is a wine that recalls the rural identity of Romagna and the cultivation by the farmers of Bombino Bianco, a variety so resistant that it always ensured the harvest so much that one could rely on it to repay one's debts. The strawberry tree depicted on the label is an evergreen plant, as resistant as the grape variety of which the wine is made.

The vinification of the Pagadebit grapes takes place in steel and lasts 5-6 months, followed by an aging in the bottle for at least one month.
