The Lambrusco di Sorbara of the Silvia Zucchi company is a Brut rosé sparkling wine made with 100% Lambrusco grapes.

After an early harvest that guarantees the harvest of grapes with greater acidity, a careful selection of the grapes follows before pressing. From obtaining the free-run must, the yeasts are added to start the sparkling process in an autoclave which lasts 5 weeks.

The Infondo wine is a Lambrusco di Sorbara from the Silvia Zucchi company, an Extra Brut sparkling wine made with 100% Lambrusco grapes from San Lorenzo (MO) near the Secchia River.

The first fermentation takes place in steel vats at a controlled temperature for about 2 months, where it then remains for an ageing of 4 months before bottling and subsequent second fermentation in bottle, which leaves a sediment and hence the name of the wine.
