Dr. Fischer
Martin Foradori Hofstätter began to take care of the family business in the 90s and after some acquisitions in Alto Adige, he began to turn his gaze as an attentive and curious winemaker also abroad, in particular towards Germany. Always a lover of great Rieslings, Martin has decided to transform his passion into a new entrepreneurial adventure. The opportunity to fulfill his dream came true in 2014 when he managed to purchase the historic Dr. Fischer estate, with wonderful old vines in some of the best exposures in the Saar region. The estate is a small jewel, located on the steep slopes of the Saar river, a tributary of the Moselle, and includes the famous crus of "Ockfener Bockstein" and "Saarburger Kupp". The historic company Weingut Dr. Fischer has thus entered the universe of properties managed by the J. Hofstätter cellar. Martin Foradori has undertaken this new challenge with great respect for local traditions, aware that he is approaching a real Riesling sanctuary. The approach was one of great respect for places so rich in history, which for centuries have been producing some of the most interesting white wines in the world. Right along the banks of the Saar and Moselle rivers, Riesling expresses its best qualities. The cool, breezy climate and the steep, sunny exposures allow for excellent ripening of the grapes. The presence of the river acts as a natural thermoregulator of temperatures, mitigating the climate, which still maintains considerable temperature variations between day and night. The stony soils, rich in slate rocks, heat up during the day and give off heat at night, avoiding the danger of frost. The vertiginous slopes guarantee excellent drainage, which together with the wind, limit the incidence of mold and other pathologies.
Riesling has lived in this region for centuries and has adapted very well to the characteristics of the territory, finding perfect interaction with the stony soils and the climate. It is precisely this delicate ecosystem of an extraordinary terroir that makes it possible to produce some of the most fascinating white wines of all. The estate includes two particularly suitable areas: Bockstein and Saarburger Kupp. Blockstein is located near the village of Ockfen, characterized by a particularly suitable steep natural amphitheater. The vines are grown on slopes facing south, south-west, on gray slate soils. The wines of this area have a mineral profile and rich fruity aromas. The Saarburger Kupp vineyard is located above the village of Saarburg, on a steep slope characterized by the presence of red slate. It gives wines with a vibrant, fresh, savory and mineral profile, with great character and personality.
