The Domini Veneti wines represent the Valpolicella Classica wine area: the original production area of the historic Valpolicella wines. The vines, grown in the hilly area of Valpolicella Classica, are: Corvina Veronese, Corvinone, Rondinella, Molinara, Dindarella, Oseleta, Rossignola, Negrara and Forselina. Producing wine for Domini Veneti is equivalent to representing the most authentic territory of Valpolicella , respecting the rhythms of nature and working the land with attention and sensitivity. Domini Veneti wines are born from a careful study of the most suitable areas of Valpolicella in order to obtain wines of the highest quality. For this reason, in 1989 the fine Domini Veneti crus of Cantina Valpolicella Negrar were born. The name of the selection refers to the territories of Valpolicella which in the 16th century were part of the Serenissima Republic of Venice. The vineyards from which the Domini Veneti wines are born are distributed between the hamlets of Jago, Moron, Torbe and La Casetta. Jago, on the Negrar hill is one of the most suitable areas of Valpolicella, has an original landscape, with the classic dry terraces, a clayey-limestone soil and ideal climatic conditions. The Moron vineyards are located in another excellent micro-area, perfect for the production of Recioto. The Torbe vineyards are located in the upper part of the hill, while those of La Casetta have a very favorable exposure for growing grapes suitable for producing great red wines. As previously stated, the grapes mainly grown for the production of Domini Veneti wines are: Corvina, Corvinone, Rondinella, Molinara and Oseleta. Corvina is an ideal grape for drying, gives structure and body to the wine and is the main grape variety of Valpolicella wines. Corvinone is mainly a variety of hills, has unknown origins and a dark blue skin. Its main feature is the ability to give longevity and spicy notes to the wine. The rondinella is an ideal vine for drying, has a less complex structure and gives excellent results in the high hills. Molinara is a grape with a purplish red skin covered with a white wax very similar to flour, hence its name, deriving precisely from "mill". It is a perfect grape for producing delicate wines, particularly drinkable and with a not very intense color.
Domini Veneti Red Wine
The most important and appreciated red wine of Domini Veneti is Amarone della Valpolicella , the most important wine of the region, on whose origin hovers a veil of mystery and legend. It is said that one of the founders of the winery, Gaetano Dall'Ora, found himself tasting the wine coming from a forgotten Recioto barrel. The wine was no longer sweet, the sugars of the Recioto had turned into alcohol and the wine had changed, it had become "a powerful bitter": this is how Amaro was born, a surprising, robust and important wine. In addition to the classic Amarone, Domini Veneti produces Recioto, a sweet red wine, whose name derives from the small side bunches that characterize the vine, the “recie”, similar to ears. It is a passito wine, produced with Corvina, Corvinone and Rondinella grapes, with an intense red color and a full and delicate taste. Another wine produced by Domini Veneti is Ripasso, obtained with the traditional technique of refermentation of the Amarone marc with fresh Valpolicella wine. With this technique Ripasso is produced, a more alcoholic wine than the classic Valpolicella, more intense and fragrant.

Amarone della Valpolicella Classico Domini Veneti is an elegant and structured wine. Obtained from grapes grown in the Valpolicella Classica on dry terraces, hand-picked, dried and aged in large oak barrels. It is a perfect wine to pair with grilled meats, braised meats and aged cheeses. Domini Veneti produces a second type of Amarone, part of the Pruviniano Collection. It is a wine obtained from the vineyards of the Marano valley, always in the Valpolicella Classica. The name, Collezione Pruviniano, derives from the denomination of these territories, which were precisely called Pruviniano. It is an elegant amarone, with aromas of black cherry, spices, vanilla and chocolate. It has a velvety tannin, a soft structure and a great persistence. Finally, Domini Veneti decided to dedicate part of the production to organic viticulture, in this way the organic Amarone della Valpolicella was born, with grapes from the Valpolicella Classica, dried in a loft and aged in large barrels for 18 months.
