Founded in 1729, Ruinart is the oldest Champagne producing Maison. At the origin of this adventure we find Dom Thierry Ruinart, a Benedictine monk contemporary of Louis XIV, to whom the cuvée Dom Ruinart is also dedicated, produced from Grand Cru Chardonnay and Pinot Noir grapes from the Côte des Blancs and the Montagne de Reims, with long aging of 10 years in the Crayères of the Maison Ruinart. Precisely on 1 September 1729, Nicolas Ruinart, a trader by profession, created an accounting register dedicated to vin de bulles and pursuing the intuition of his monk uncle. Already in the middle of the century, the purchase of the Crayères, the precious gypsum quarries for the refinement of Champagne , will represent another happy intuition to characterize these products in an unequivocal way. With Ruinart we are faced with truly refined Champagne and in which the production specialization blends with a lifestyle fully animated by beauty and taste. Another delicate phase consists in the extraction of the must from the grapes according to a soft pressing and aimed at maintaining the aromatic range expressed by the bunches. The task of the Chef de cave is also exciting, protagonist in the precious assembly phase in which the base wines are combined to create the product to be made sparkling. During the second fermentation in the bottle, the Ruinart Champagnes stay up to 10 years in the Crayères recently recognized as a UNESCO World Heritage Site.
