Revì
We are in 1982 when Paolo Malfer, having a long experience on an experimental level, thinks of including the fruit of long and passionate studies in the Revì winery. The name Revì derives from the toponym of the production area which, in all probability, was already known in ancient times for the cultivation practices of the vine and for the quality of the grapes that derived from it. In particular, the mention 'Re vin' well describes the combination of respect and dedication that for many years determines the fortune of the area. Revì production is entirely dedicated to Trentodoc and has managed to involve all the members of the family who work for the conservation of the territory and the maximum celebration of the brand.
The Trentodoc Revì
The production of each Trentodoc Revì begins with the careful care of the vine plants which constitute the basic patrimony to start the winemaking processes. In an area like Trentino , occupied by rows of Chardonnay and Pinot Noir , the material to be vinified benefits from favorable exposures, from breezes that blow from Lake Garda and from a consistent temperature range that guarantees the grapes a perfect ripeness with development. of an adequate aromatic profile. While waiting for the right degree of ripeness, the clusters are subjected to soft pressing to obtain the free-run must with a great concentration of perfumes and aromas. The low temperatures that accompany the first fermentation are useful to preserve the aromatic profile in terms of elegance and delicacy. From this excellent base we move on to the second phase, the one that distinguishes the Classic Trentodoc method and which involves a refermentation in the bottle thanks to the liqueur de tirage , with the consequent development of additional aromatic components and the unique perlage that distinguishes the sip. The sugars referment and the carbon dioxide remains imprisoned in the bottle until remuage procedures that over time bring the exhausted yeast closer to the neck of the bottle. With disgorgement or degorgement the deposit contained in the cork is removed to proceed with the addition of the liquer d'expedition , a mixture of wine and sugar that will determine the type of Trentodoc to be obtained. What are the characteristics of Revì Trentodoc Rosé?
