Podere Castellare di Pelago is the first micro-distillery specialized in the production of gin in Italy. His gin, Peter in Florence, is a tribute to Florence and the high quality gin botanicals that can be picked up locally. Especially the iris, symbol of the city of Florence, which in this distillate acquires a particular importance: for the first time not only its roots but also in petals are included in the distillation process, with amazing sensory effects in the final gin. It is a London Dry Gin made and finished, which brings as a dowry as many as 14 botanicals from organic farming, almost all coming from the Tuscan territory, except those unavailable in Italy, made using an exclusive still, built specifically for the distillery on the model of the Carterhead used to produce some of the best gins in the world.
