Palmento Costanzo
The story of Palmento Costanzo begins in 2011 when the Costanzo family decided to start a recovery activity of an ancient millstone, the traditional Etna cellar used in the 18th century. Although equipped with state-of-the-art construction systems, built according to the principles of bio-architecture, the millstone still retains the original internal structure, with a multi-level arrangement in order to allow "gravity" vinification: in the highest level they are pressed the freshly picked grapes, where they are separated from the stalks; the must that comes out of it reaches, by gravity, the fermentation vats, and then goes down into the barrel room where the long aging will take place.
Palmento Costanzo produces fine Etna DOC wines, within a territory that in 2013 became a UNESCO World Heritage Site, able to guarantee a high biodiversity. We are located in the district of Santo Spirito, in the hamlet of Passopisciaro, a small pearl set on the lava of the volcano recognized as one of the most suitable areas of the denomination, particularly rich in organic matter and minerals, whose soils are characterized by volcanic browns resulting from the disintegration of lava deposits. The fertility of the land allows a flourishing cultivation of sapling vines supported by chestnut poles of the native vines Nerello Mascalese, Nerello Cappuccio, Carricante and Catarratto. In the vineyards owned there are also many pre-phylloxera vines, plants of inestimable historical and enological value.
