Louis Bouillot
The Maison Louis Bouillot is located in Nuits-Saint-Georges, in the heart of the famous Côte d'Or and represents one of the best excellences in the production of Crémant de Bourgogne. The Appellation Crémant represent the French Classic Method, which is produced outside the AOC Campagne territory. The AOC Crémant de Bourgogne was established in 1975 and covers a large area, covering the main territories of Burgundy from north to south: Chablisien, Châtillonnais, Côte de Nuits, Côte de Beaune, Côte Chalonnais, Côte Mâconnaise and Beaujolais. Faithful to the noble traditions of Burgundy, Louis Bouillot creates labels that elegantly express the excellence of one of the best terroirs in the world and of vines with extraordinary qualities, in particular: chardonnay, pinot noir, aligoté and gamay. The possibility of using different grape varieties in the blending, in various proportions, allows to produce wines that are always very balanced and harmonious. The pinot noir gives structure, power and notes of small berries, the chardonnay refined elegance and freshness, the gamay fruity richness and the aligotè a pleasant vivacity.
The labels of the Maison are born from over 130 years of experience in the field of vine cultivation and the elaboration of great wines, always made with love and respect for the territory. The entire production process is carried out following the best artisan customs, to always offer the highest quality. The harvests are carried out manually, with a slightly early harvest of the best bunches, in order to preserve the right acidity for the sparkling wine bases. The grapes are pressed in a very soft way, separately for each variety, to extract only the precious must. Fermentation proceeds at a low temperature in order to enhance the scents and aromas. The base wines mature in stainless steel tanks or in oak barrels, according to their characteristics and subsequent use. At the end of the refinement period, the base wines are selected and blended to create the final cuvées. The second fermentation takes place in the bottle, according to the Traditional Method. At the end of the rest period sur lattes, we proceed with the remuage, the dégorgement and the final dosage with the liqueur d'expédition. We follow the same steps that lead to the creation of Champagne, with the only difference of the territorial origin. The range of labels of the Maison Louis Bouillot can satisfy every consumer. The production is, in fact, divided into various collections: the Classics, which focus on the fruity fragrance, the Millesimati, dedicated to those who love to savor the taste of the vintage, Les Grands Terroir, which reward the best plots of the estate and finally Les Audacieuses, expression of the desire to experiment.
