La Scolca
La Scolca was born from the far-sighted vision of Giorgio Soldati, who decides to bet on the Cortese white grape variety in a region that has always been known for the production of great red grape wines: Piedmont. Gavi proves to be the ideal territory for its cultivation, especially in the Rovereto area which could be defined as a Grand Cru. Giorgio Soldati is an innovative interpreter, but without ever failing in loyalty to tradition, the territory and Gavi, a wine that he defended with sword even when it was considered a white against the tide.
The care of the vineyards, the modern winemaking technology that allows to operate in hyper-reduction and diversifying the fractions of must according to the age of origin of the vineyard, from 5 to 60 years, allows to obtain a wide range of wines that they know how to tell the aromas and flavors of the territory, especially in the Riserve d'Antan versions, obtained after 10 years of aging "sur lie" in the cellar.
