Cantina Fabiano was founded in 1912 by the hand of Francesco and Sergio Fabiano, who began to market their wines first in Venice and then in Verona. Over the years they started the construction of a new winery in Sona and at the same time they began a progressive commercial expansion that transformed the Fabiano family into a large exporting company. The main feature of the Fabiano winery has been the ability to raise the quality level of the wines over the years. For more than 100 years, Cantina Fabiano has been producing the great classics of Venetian enology, such as Amarone della Valpolicella and Valpolicella Ripasso .
Fabiano Red Wine
Fabiano's most important red wine is Amarone della Valpolicella, a historical denomination whose production disciplinary includes three types: Classico, Valpantena and Riserva and can only be obtained from Corvina Veronese, Corvinone and Rondinella grapes. The production area of Amarone includes the territories of the municipalities of Marano, Fumane, Negrar, S. Ambrogio, S. Pietro in Cariano, Dolcè, Verona, S. Martino Buon Albergo, Lavagno, Mezzane, Tregnago, Illasi, Colognola ai Colli , Cazzano di Tramigna, Grezzana, Pescantina, Cerro Veronese, S. Mauro di Saline and Montecchia di Crosara. The historic label of Amarone della Valpolicella DOCG Classico is a red wine produced with carefully selected grapes and then left to dry according to tradition. Specifically, it is a wine obtained from Corvina, Corvinone, Rondinella and Croatina grapes harvested by hand and cultivated on red soils rich in skeleton and limestone. The main characteristic of Amarone is the drying, for a period of 4 months during which the harvested grapes, before being pressed, are dried and subsequently vinified in steel. Amarone Fabiano is a garnet-colored wine, with notes of red fruit, an intense and elegant palate and a balanced tannic texture. Amarone Classico Fabiano is perfect to combine with braised meats, game and aged cheeses. Another very popular Fabiano red wine is Amarone della Valpolicella DOCG Riserva "I Fondatori", a wine dedicated to the founder of Fabiano and obtained from Corvina, Corvinone, Rondinella and Molinara grapes carefully selected from the vineyards located near the ancient village by Negrar. After harvesting, the grapes are dried for about 4 months in ventilated rooms, they are subsequently pressed and then vinified. The main feature of Amarone Riserva is the aging in large barrels for 30 months, plus another 6 months in the bottle. It is a dry wine, with a very elegant and persistent garnet color, perfect to combine with grilled or roasted meats. If you are looking for a very intense and traditional red wine, we suggest the Valpolicella Ripasso DOC Classico Superiore, a red wine that comes from Corvina, Rondinella, Molinare and Negrara grapes, grown in the vineyards located in the Negrar and S. Pietro in Cariano area. Ripasso is a unique wine, the result of two fermentations, in fact after the Valpolicella is vinified in steel, it undergoes a second fermentation with the pomace coming from the racking of Amarone and Recioto. The resulting wine is aged for 12 months in Slavonian oak barrels and 3 months in the bottle. Its main notes are of ripe cherries and blueberries. It is a dark red wine, very intense and spicy, with soft and full-bodied tannins. Perfect to combine with grilled meats, roasts and aged cheeses.
