Champagne Dom Pérignon is perhaps the most famous Champagne in the world. It is appreciated by all enthusiasts and is a true symbol of elegance and originality. It was born from the happy intuition of Robert-Jean de Vogüé who in 1936 decided to vinify the old vintages of the Moët & Chandon house reserve wines.
It all began in 1668 with the arrival of Abbot Pierre Pérignon at the Abbey of Saint-Pierre d'Hautvillers. His dream was to produce a very high quality wine, a true French icon. The abbot decided to improve the cultivation techniques of the vines and to modify the production methods. The result was the birth of a completely different wine from all the others: Champagne.
The Champagne created by the abbot reached the French court in Versailles and in the 17th and 18th centuries it became one of the most popular wines of the time.
In 1829 the remains of the Abbey were taken over by the partners Pierre-Gabriel Chandon and Jean-Rémy Moët. The two partners decided to preserve this magical place and to restart the production activity. In 1936, with Robert-Jean de Vogüé, president of Moët, the cuvée de prestige 1921 was born: the first Dom Pérignon.
With the presence of Richard Geoffroy, the Maison's production philosophy will further change, once again focused on the constant overcoming of very high levels of exclusivity, rarity and excellence.
Today the Chef de cave of the Maison is Vincent Chaperon. With each new vintage, its mission is to convey harmony and uniqueness.
The uniqueness of Dom Pérignon is given by the use of the best Pinot Noir (in small percentage) and Chardonnay grapes and by the exclusion of Pinot Meunier. All Dom Pérignon Champagnes are vintage, i.e. made from grapes from the same vintage.
To produce Champagne , the Champenoise method is followed, which involves two fermentations. We proceed by vinifying the Chardonnay and Pinot Noir grapes separately, thus obtaining the two base wines. The two base wines are then blended in different percentages based on the vintage. The wine thus obtained is fermented a second time in the bottle, where the second fermentation takes place.
The quality of Dom Pérignon depends on various factors such as: the long aging on the lees, the very high quality of the grapes, acidity and aromatic complexity. All these elements guarantee long-lasting wines of extreme finesse.
