Clément
After thirty years dedicated to the production of cane sugar, and precisely from 1887, the year in which the doctor and mayor Le François, Homère Clément, bought the Habitation and the plantation of the domaine de l'Acajou, the Clément distillery was born, a reference point for agricultural rum. On Homère's death, the property was taken over by his son Charles, who was assigned the task of perfecting the family rum, thanks to his studies on distillation carried out at the famous French school Louis Pasteur. The distillery was purchased by the Bernard Hayot group in 1986 which contributed to the spread of the brand while preserving the production and cultural heritage of the Clément family.
Agricultural rum, produced using fresh sugar cane juice instead of traditional molasses, has been produced in Clément since 1996 in full compliance with the strict standards imposed by the Martinique AOC specification. The master distiller Emanuel Becheau, assisted in the production by Robert Peronet, an iconic character from Martinique, takes care of the entire process which ends with an aging in fine American white oak barrels often previously used for the aging of Kentucky Bourbon whiskey.
