Brùton
The Brùton brewery was born on the outskirts of Lucca, from an idea of Iacopo Apo Lenci who in 2006 inaugurated the brewery on the banks of the Serchio river, in a typically Tuscan rural building.
All Brùton beers are produced at high fermentation, without filtration or meal preparation. The products are composed of a 5% wheat base to improve the foam resistance. The beers are refermented in the bottle with a style that remotely recalls the Champagne method, to enhance the complexity and conservation of the product.
Brùton was the name given to a drink made with fermented cereals (therefore very very similar to beer) in ancient Crete. Abundant Brùton offerings characterized the rites dedicated to the Sacred God Bull, the powerful and invincible Minotaur, whose stylized head has nicely become the company's logo.
