The history of Sartori winery and its link to the Verona area dates back to 1898. At that time, Pietro, a man of great entrepreneurial spirit, was encouraging wine business in the area, through the making of Rosso Veronese. Sartori was very determined and constantly interpreted wines from the Veronese tradition, such as Valpolicella, Soave, Bardolino, Bardolino Chiaretto, customizing the tasting experience but still preserving the authenticity of all wine varieties.
This whole process led to the creation of the Valpolicella Ripasso Classico Superiore Regolo, a blend of Corvina, Croatina, Corvinone and Rondinella grapes, harvested in the area north of Verona. Using what has now become a world-renowned technique, this base Valpolicella is made through fermentation of the sugars of Amarone skins, which give it more colour, tannins and longevity. The result is a long aged wine with ripe red and black fruits, finely spiced notes and flavorful hints of cocoa and tobacco for a soft, fascinating and persistent taste.

Regolo is a Valpolicella Ripasso Superiore from the Veneto company Sartori di Verona, located in the province of Verona. We are on the vineyard hills of Valpolicella, where the company has been producing wine for four generations.
The grapes that arrive in the cellar are subjected to crushing-destemming, followed by fermentation at a controlled temperature for 8-10 days. During the second fermentation the so-called "ripasso" of the wine takes place on the Amarone pomace in the month of February. ...
