Brandy generally refers to grape or other fruit spirits, undergoing an ageing period in oak barrel. Based on ageing time there are different types of brandy AC, with two years of ageing, VS (Very Special), VSOP (Very Special/Superior Old Pale) and XO (Extra Old), respectively from three to six years of ageing and Hors d'Age brandy, aged for longer than six years. Brandies are mostly produced in Italy, Spain and France. French brandies, with Charente and Gascony appellation take the name of cognac and armagnac. Brandy is usually for after meals or relaxation moments, it can be used for the making of refined cocktails but also paired with a nice cigar or a bitter chocolate bar.
