Description
Sexton Vineyard Chardonnay is made from Chardonnay grapes from the Yarra Valley in Australia.
The harvest is manual and the fermentation takes place with indigenous yeasts, followed by bâtonnage for the first month. The aging takes place in French oak (20% new) for 8 months on the yeasts.
The wine has fruity hints of white peach and ripe apricot, spicy biscuits and a delicate note of flint, with a silky taste and good intensity.
It pairs very well with seafood cuisine.
