Description
The Volnay 1er Cru Clos des Angles by Olivier Leflaive is a red wine from a terroir that benefits from good south-east exposure leading to an early ripening of the grapes. The soil, a combination of limestone, clay and silt, contributes to the complexity and elegance of the Pinot Noir, harvested from vines around 40 years of age.
The winemaking begins following a careful selection of the grapes, which are pressed partially whole and subjected to a 21-day alcoholic fermentation with maceration on the skins in order to extract color, aromas and tannins. The process ends with a 16-month refinement in partially new oak barrels.
In the glass it appears ruby red in color. It offers crunchy and fresh aromas of red berry fruit to the nose, while on the palate it is silky and refined, well balanced in all its components.
It pairs beautifully with second courses based on red meat. Try it in the company of a lamb fillet.
