Description
The Volnay 1er Cru Monopole Clos d'Audignac by Domaine de la Pousse d'Or is produced in the renowned Côte de Beaune territory. This wine comes from vines grown on a subsoil composed of calcareous marl and, in some areas, clay-limestone screes of Bathonien, characteristics that give the wine a notable mineral complexity. The biodynamic cultivation adopted amplifies the connection between the vineyard and the natural environment, respecting the life cycle of the plants and the soil.
The manual harvest and rigorous selection of the grapes ensure a high quality of the harvest. After harvesting, the wine is fermented with traditional techniques and subsequently aged on the yeasts in oak barrels, 20% of which are new, for 15 months. This aging method helps integrate the flavors and adds a subtle complexity to the wine.
It has a ruby red color. On the nose, it exhibits a complex aromatic profile with notes of vanilla, licorice and caramel, enriched with nuances of cherry and raspberry. In the mouth, the wine reveals itself to be rich and full-bodied, with a complexity that envelops the palate and leaves a lasting impression of elegance and depth.
This wine pairs perfectly with red and white meats, as well as various types of game. Its rich texture and flavor complexity make it an ideal companion for intense dishes and robust flavors, enhancing each bite with its distinctive character.
