Description
Pierrick Bouley’s Champans is a red wine made with 100% Pinot Noir grapes, from a 0.25 hectare parcel facing south-east, in the Vonlay region of Burgundy. The terroir is composed of fine clay soil mixed with pebbles, which ensures excellent drainage. This particular soil helps give the wine a remarkable structure and freshness.
The winemaking process involves a manual harvest in crates, followed by a careful selection of the bunches on a vibrating sorting table. Since 2016, the winemaking process has been done without sulphites to preserve the magnificent aromas of fresh fruit. Alcoholic fermentation begins in tanks and continues for half the time, after which the wine is transferred to oak barrels for 12 months of aging. At the end of this period it is racked, stabilized, filtered or not depending on the needs and finally bottled in the cellar.
On the nose it presents intense aromas of cherry and black cherry, very fruity and lively. On the palate it is rich, with a rounded but solid material that evolves with time. It is a wine that can be appreciated in the early years to capture its freshness, or it can be left to age for over fifteen years, when the tannins soften and the structure becomes more sensual.
This red wine is perfect to accompany dishes such as duck with figs, quail with grapes or pork tenderloin with plums.
