Description
Pas Dosé Stefano Bottega is a vintage sparkling wine that wants to be a pure expression of the territory from which it originates. It comes from a blend of grapes traditionally suited for sparkling wine production, such as Glera and Chardonnay, grown in optimal conditions for ripening, i.e. within a temperate climate, on hills with favourable exposure to the soil, from draining soils of calcareous nature, clay which give good minerality and excellent aromas.
The grapes are harvested during the first days of September and immediately transported to the cellar where de-stemming and soft pressing takes place for the extraction of the must. The first fermentation takes place in steel with selected yeasts. The second fermentation in pressurized tank as usual in the Martinotti-Charmat method at a temperature of 15-16 °C aimed at preserving the integrity of its fragrance. Strictly not dosed, it contains less than 3 grams per litre of sugars naturally residual from the fermentation processes.
It reveals itself in the glass with a bright straw yellow colour and a fine, lively and persistent bubble. From the first smell it unravels fresh notes of apple and nectarine peach together with elegant hints of acacia flowers and citrus in the finish. The sip is striking for its sapidity in perfect balance with freshness and does not lack intriguing mineral notes that accompany the palate throughout its persistence.
To be uncorked with appetizers and sushi, it goes well with shellfish, fish and white meats.
