Description
Rosé della Capita is a rosé sparkling wine produced with the Metodo Classico and the result of a blend of Syrah, Sangiovese and Cabernet Sauvignon grapes, grown in the Maremma areas and characterized by clayey soils with silt and fine skeleton.
After harvesting between the third week of August and the first of September, the hand-picked grapes are pressed whole or partially de-stemmed. Fermentation takes place in steel and is followed by a rest on the lees for at least 4 months. After the tirage, the wine rests on the lees for another 60 months before disgorging.
Pale pink in colour, it has a fine and persistent perlage. Hints of bread crust and toasted peanuts are mixed with notes of red fruits. Good balance and freshness on the palate, right flavour moderated by red fruits and creaminess.
Ideal for appetizers, it goes well with cold cuts, white meats and shellfish.
