Description

The Pas Dosé sparkling wine of Corte alle Stelle is produced with a sparkling process that follows the classic method, which gives the wines a particular finesse and persistence.

The sparkling wine is produced from a blend of Pinot Noir and Chardonnay grapes, harvested in early September. Once in the cellar, a first cold fermentation of the must takes place in steel tanks. The second fermentation takes place in the bottle according to the classic method, with an 18-month aging on the lees.

Golden yellow in colour, it has a fine and persistent perlage. The nose opens with elegant aromas of white peach, plum and honey. On the palate it is full and soft, with a marked flavor and a persistent finish.

It is a sparkling wine to be consumed both as an aperitif and throughout the meal. It goes particularly well with raw fish and molluscs, crustaceans and sushi.
