Description
This Spumante Metodo Classico Brut is produced in Italy using Chardonnay and Pinot Noir grapes. The harvest is manual and takes place at the beginning of September, ensuring the selection of the best grapes to obtain a high quality wine.
The vinification involves a soft pressing of the whole grapes and a fermentation at a controlled temperature of about 15°-16°C. In spring, the cuvée obtained by assembling the various wines is bottled and subjected to a second fermentation directly in the bottle. The refinement takes place in the bottle on its own fermentation lees for a minimum of 36 months.
The wine has a deep straw yellow color, clear and bright, with a very fine and persistent perlage. The aromatic expression is very intense with evident notes of yeasts, bread crust, aromatic herbs, acacia flowers and honey. On the palate it is broad, harmonious and very persistent, reflecting all the notes perceived on the nose.
Perfect as an aperitif or after-dinner wine, thanks to its structure it can accompany an entire meal, from starters to cheeses, through first courses of pasta and second courses of fish, white meat, game birds and even grilled red meats.
