Description
The Mimmo red wine from the Le Piane winery originates from the union of Nebbiolo and Vespolina grapes from newly planted vineyards, the same ones that can be found in its older brother Boca, and a third of Croatina grapes from centenary vines to give a cuvée exclusive. The name recalls the collaborator of the founder Christoph Künzli, Mimmo Staropoli, who played a decisive role in the qualitative growth of the entire company range.
The vinification takes place separately for the Nebbiolo grapes, which are subjected to a 30-day maceration in steel and then matured for 24 months in large Slavonian oak barrels, and for the Croatina and Vespolina varieties, with a short maceration in wooden barrels and aging for 12 months in Tronçais oak tonneaux and for a further 12 months in Slavonian oak barrels, before the subsequent blending and bottling.
Clear ruby red in color with purple reflections, it offers the nose a large bouquet of floral notes that evoke rose and lavender, alternating with hints of ripe berries and pomegranate, to which are added balsamic hints, tobacco and licorice. On the palate it is vibrant and ready, with a velvety consistency, with a finish of excellent flavor.
This wine goes very well with white meats, pasta and appetizers, both with vegetables and fish.
