Description
Ciman by Elio Sandri is a red wine from the Langhe area, produced with Nebbiolo grapes grown in the Perno hamlet of Monforte d'Alba. This wine expresses the character and tradition of the territory, breaking away from the Barolo specifications to follow a more original and distinctive path.
Winemaking involves the fermentation of the grapes in concrete tanks, followed by aging for approximately 48 months in the same containers, without passage in wood. This method preserves the purity of the fruit and the integrity of the terroir.
Ciman stands out for its intense aromas of ripe red fruit, spices and mineral notes. On the palate it is complex, with a good tannic structure and a pleasant freshness that balances the body of the wine.
Ideal with grilled red meats, mature cheeses and cured meats.
