Description
Located between the picturesque slopes of St. Pierre de Soucy and St. Jean de la Porte, the Vin des Allobroges Améthyste of the Domaine des Ardoisières stands out for its connection with its typical terroir, characterized by marly, schistose and clayey soils, on where the Mondeuse Noir and Persan vines reach an average age of 35 years.
The grape harvest is done manually with careful respect for the natural cycle of the vineyard. Winemaking follows traditional methods, keeping the bunches whole to preserve the integrity of the fruit. The classic pressing starts a spontaneous fermentation with indigenous yeasts, followed by an 18-month refinement in barrique which gives the wine structure and refined nuances.
Ruby red in colour, it has an inviting aromatic profile that intertwines ripe red fruits, delicate spices and floral accents. On the palate, the aromatic complexity is repeated with a perfect harmony of flavors. The distinctive minerality of the terroir blends with well-integrated tannin, offering a solid yet elegant structure, with a pulpy texture that highlights its body and persistence.
This wine pairs beautifully with mature cheeses, cured meats and grilled meats.
