Description
The Rolle di Le Paradou comes from vineyards located in Provence, a few kilometers from the coast.
After harvesting and pressing, the must is fermented in stainless steel tanks in contact with the skins for 15 hours. It is then subjected to low temperature pressing and reassembly. To preserve the freshness of the wine, malolactic fermentation is not carried out.
It presents itself to the eye of a bright golden yellow, while the nose recalls citrus notes, exotic fruit and almond. The sip is taut and aromatic, with a perfect balance between citrine freshness and minerality.
Ideal in combination with seafood, grilled fish, cold salads and goat cheeses.
