Description

Mephisto from Domaine de l'Ecu is a red wine produced in the Loire region of France. This wine is made with Cabernet Franc grapes grown on granite soils, with vineyards that have an average age of 50 years. Fred and Claire Niger run Domaine de l'Ecu, using traditional farming methods and without added sulphites.

The vinification of Mephisto includes destemming and spontaneous fermentation in stainless steel tanks, followed by a 12-day maceration. Subsequently, the wine is aged in amphorae for 15 months, enhancing the purity and depth of the wine.

Mephisto offers an elegant, juicy and deep flavor profile, with meaty and delicate notes. The use of the amphora contributes to producing pure and refined wines, with a great expression of the terroir.

This wine pairs perfectly with handmade egg pasta dishes, such as pappardelle with beef or wild boar ragù, enhancing the complexity and richness of the flavours.
