Description
The three varieties of Perlhofer wine mature in three carefully selected areas. Since the different qualities prefer diversified soil characteristics, the areas of Santa Maddalena, Oltradige and Bassa Atesina are particularly suitable for the cultivation of these varieties. The vines of Merlot prefer hot soils of porphyry origin, those of Lagrein prefer sandy and clayey soils while those of Schiava prefer sandy soils rich in nutrients located on slopes. The vines, some of which are over 50 years old, are grown with the traditional pergola and guyot system and grow at 220 - 450 meters above sea level.
In consideration of the different varieties and areas of cultivation, the grapes are selected by hand at the respective degree of ripeness during the month of October. The yield is 70 hectoliters of wine per hectare. After the delivery of the selected grapes to the cellar, the traditional fermentation of the separate musts takes place at a controlled temperature of 28 ° C for 10 days. After assembly, the wine is aged in large wooden barrels.
It goes well with fried fish, light dishes, raw or grilled red meats.
