Description
The Veronese Palazzo della Torre by Allegrini originates from vineyards located on the hills of Fumane in Valpolicella, in the province of Verona. It is one of the wines that has made Allegrini's production famous worldwide.
It is produced with Corvina Veronese, Corvinone, and Rondinella grapes, harvested and selected entirely by hand in two passes, one starting from September 10 for the grapes intended for drying and the other at the beginning of October for the grapes intended for immediate vinification. Fermentation occurs separately in stainless steel at controlled temperatures of 25-29°C and 8-22°C, respectively, for durations of 10 and 15 days. After malolactic fermentation in barriques, the wine is aged in second-pass French oak barriques for 15 months and in the bottle for another 7 months.
It presents a deep ruby red color. On the nose, it opens with intense aromas of sour cherry, carob, and figs, enriched by elegant notes of coffee and nutmeg. On the palate, it is full-bodied, velvety, and harmonious, with a prevalence of ripe and fleshy fruit flavors.
Perfect for pairing with saffron risotto and porcini mushrooms, it is ideal with typical Italian first courses such as Amatriciana and Carbonara, grilled meats, and roasts.
