Description
The Merlot Decima Aurea of Tenuta Santa Maria comes from vineyards rooted in the Val d'Illasi, east of Verona.
The harvest is carried out for a first part by hand in boxes between the second and third decade of September. This is followed by a slight drying of about a month and the harvest, in October, of another part of overripe grapes. The two batches ferment separately at a controlled temperature and mature in oak barrels for about 14 months, then are blended and aged in the bottle.
It is characterized by an intense ruby red color. In the glass, notes of wild fruit and dried plums are expressed, accompanied by an intriguing reference to sensations of coffee, eucalyptus and vanilla. The taste echoes the aromatic texture perceived on the nose, in a balanced, savory and pleasant taste, animated by important tannins that lead to a long finish on licorice tones.
It is a wine that can be tasted in the company of red meats and game, but also goes very well with mature cheeses with an intense flavor.
