Description

The Vernaccia di San Gimignano Selvabianca is a refined expression of this historic Tuscan grape variety, cultivated using certified organic methods. The grapes come from vineyards located between 250 and 360 meters above sea level, on soils of varying composition ranging from sandy and fossil-rich to deep, medium-textured soils.

The harvest takes place manually starting from the third decade of September, with careful selection of the grapes. After a skin contact maceration with whole berries and a gentle pressing, fermentation occurs at controlled temperature in concrete and stainless-steel tanks. The aging continues on the noble lees until bottling, to enhance the structure and aromatic complexity.

It presents itself with a straw-yellow color with greenish reflections. On the nose, it expresses a clear and mineral bouquet, with aromas of white-fleshed fruit, apple, lime, lily of the valley, thyme, and limoncino. On the palate, it is fresh, vibrant, and savory, with a taut structure and a long, decisive finish.

It pairs perfectly with tartare, carpaccio, light first courses, fried land or sea foods, white meats, and roasts.
