Description
Su'entu, in Sardinian dialect "the wind", is the name that best describes the climatic characteristics of the wild area in which this winery is immersed. Su'Imari comes from vineyards well exposed to the sun and ventilated which grow luxuriantly on the small hill surrounding the winery, with clayey and calcareous soils, which give the wine excellent minerality.
The harvest is strictly manual and after the grapes are brought to the cellar, the grapes are softly pressed in order to preserve their organoleptic qualities intact. After fermentation in stainless steel, at controlled temperature, the wine ages in steel for 5 months, before refining in the bottle.
Its beautiful straw yellow color with greenish reflections shines in the glass, and releases an extraordinary and citrusy freshness on the nose. On the palate it proves fresh, aromatic and balanced.
It is the most suitable wine to accompany fish-based first courses, as well as a salmon on a bed of fresh cheese. To try absolutely with linguine with seafood and a good fatty fish with acquapazza.
