Description

Animologico Verdicchio di Matelica DOC is an organic white wine without added sulphites. The grapes come from vineyards located 420 meters above sea level, with southern exposure and loose soil.

The harvest takes place manually in early October, using grapes from the Matelica clone of Verdicchio in tight bunches, grown without the use of copper but with chitosan, a natural product extracted from mushrooms and crabs. Winemaking involves sanitizing the grapes in a refrigerator with ozone washing and cooling to 0°C, followed by a very short cryomaceration in the press for 1 hour. Fermentation takes place at a temperature of 14-16°C for approximately 25 days in 100 hl stainless steel tanks, using natural yeast selected for its low sulfur production. The wine matures for 14 months in stainless steel, with malolactic fermentation and clarification of the must.

The wine has a bright straw yellow color. On the nose, it offers aromas of white fruit and fresh flowers, with mineral notes. On the palate, it is fresh and balanced, with good acidity and a persistent finish.

It pairs perfectly with fish dishes, fresh cheeses and light first courses.
