Description
Venissa Bianco is born in vineyards located on the island of Mazzorbo, west of Burano, in the Venetian Lagoon.
This wine is obtained exclusively with Dorona grapes, a variety from the native Venice, today at risk of extinction, which the Bisol family has undertaken to recover. The manual harvest takes place in the second half of September. The must ferments, with maceration on the skins for more than 20 days in steel, at a controlled temperature of 16-17°C. Maceration on the skins is practiced to maintain the Venetian tradition: in fact in Venice it was not possible to have underground cellars and cool temperatures due to the high tide. It was therefore essential to macerate the Dorona to structure it thanks to the antioxidant substances present in the peel and seeds. Finally, the wine ages for 48 months in concrete barrels and 12 months in the bottle.
The wine is characterized by a brilliant straw yellow colour. The nose opens with an intense and complex bouquet, with hints of pear, apricot, plum, almond and spices, enriched by evident iodized notes fused with citrus fruits. On the palate it is full and warm, with a pleasant minerality and softness, which invite you to drink.
Perfect to accompany risottos and fish-based first courses, it is ideal in combination with grilled fish, seafood and white meats.
