Description
The Venezia Giulia Rosso Calabrone by Bastianich Winery is born in vineyards located in the eastern hills of the Friuli DOC area.
It is mainly produced with Refosco grapes and with Schioppettino, Pignolo and Merlot grapes. 50% of the Refosco bunches and the whole Schioppettino are hung in a ventilated attic for 4 - 8 weeks for drying, favoring the concentration of the notes of each berry. The bunches are then de-stemmed by hand and gently crushed. The wine is then placed in open tonneaux for maceration and fermentation, followed by hand pressing, to make the extraction delicate. A vertical wooden press extracts the soft tannins and reduces skin-to-skin friction. The wine is then placed for 24 months in Allier barriques and then assembled. The malolactic fermentation takes place in barrique with frequent bâtonnage, then refines in the bottle for 3 years.
It is a wine with a rich and complex bouquet, with hints of coffee and chocolate, enriched with notes of spices and ripe red fruits. On the palate it presents a remarkable structure and grip, maintaining an overall elegance.
Perfect to accompany robust dishes, it is ideal in combination with boar-based dishes and grilled or grilled red meats.
