Description
This Cabernet Sauvignon by De Stefani is produced on the Le Ronche farm, located in Fossalta di Piave, an exceptional terroir located between the Adriatic Sea and the Dolomite mountains. The alluvial soil, defined as "caranto", is rich in white clay and dolomite rock sediments, which helps to create the ideal conditions for the cultivation of the Cabernet Sauvignon vine. The mild climate, with little rainfall and favorable summer temperatures, ensures optimal ripening of the grapes.
The harvest takes place at the end of September, when the grapes reach advanced maturity. The grapes are destemmed and then fermented in stainless steel tanks with maceration at a controlled temperature. The refinement takes place in barriques and oak barrels for 8-12 months, enriching the wine with complexity and structure.
It has an intense ruby red color, a prelude to an olfactory bouquet dominated by a fruity aroma of ripe red berry fruit. On the palate, the taste is harmonious and full-bodied, supported by a balanced tannic structure and enriched by pleasant notes of berries.
Ideal in combination with rich and savory dishes, such as tagliatelle Bolognese, red meats, braised meats and roasts. A perfect companion to enhance flavors while offering a quality food and wine experience.
