Description
Appassimento Dal Moro comes from a selection of native Veronese grapes from 20-25 year old vines of the Veronese hilly area, located at an altitude of 100-350 meters above sea level, on predominantly clayey soils with limestone stretches.
The bunches of Corvina Veronese, Corvinone, Rondinella and other complementary vines are harvested towards the end of September with manual selection. The grapes are subjected to a drying period of 60 days in order to acquire a greater concentration of sugars and aromatic substances. It then proceeds with a fermentation at a temperature of 25 ° C with maceration of 10 days. Once the malolactic fermentation is complete, the wine is aged in wood.
It announces itself to the eye with a beautiful ruby red enlivened by more advanced shades. On the nose there are complex aromas, on which cherry and vanilla stand out. On the palate it is harmonious, full and velvety, with a long finish on spicy tones.
Perfect to combine with red meat main courses, grilled meat and braised meats. Recommended in the company of all aged cheeses.
