Description
The Pas Dosé rosé sparkling wine is produced by the Sandro de Bruno winery, founded in 2002 and located in the Soave and Lessini Mountains area, on volcanic soils.
The sparkling wine is made from 100% Pinot Noir grapes, harvested during the first week of September. The grapes undergo de-stemming and maceration on the skins for 24 hours. After soft pressing, the must obtained is fermented in steel. The fermentation in the bottle takes place the following year, in late spring, after which the wine refines on its lees for at least 36 months.
In the glass, the sparkling wine appears antique pink with a fine and persistent perlage. On the nose there are floral aromas of acacia and dog rose, ripe citrus and spices, from curry to white pepper. The sip is creamy and enveloping, with a pleasant mineral finish.
Excellent with seafood and saffron risotto, cold cuts and cheeses, seafood and shellfish.
