Description
Zýmē's Syrah comes from the suggestive area of the Berici Hills, near Lonigo, in Vicenza. It is a wine with a strong and intense character, a concept symbolically depicted by the complex subject represented on the label which recalls the idea of a woman, warrior and winemaker, who knows how to be passionate like the heart and its colour.
The harvest takes place manually, in small boxes, or plateaux, between the second and third ten days of September. The grapes are then left to rest for 20-30 days in the fruit cellar, before being subjected to fermentation in steel tanks for approximately 40 days. The refinement continues in new barriques for at least 48 months and for a further 12 months in the bottle.
In the glass it takes on a dark ruby red color tending towards garnet. The nose is broad and intense, with notes of pepper and chocolate dominating the olfactory picture, accompanied by hints of blueberry, currant and tobacco. In the mouth it is an intense and complex wine, very inviting.
It pairs perfectly with grilled red meats, game and mature cheeses, as well as selected cured meats such as capocollo and coppa.
